1. What made you decide to open a gyros and custard stand?

I’ve been working in the restaurant business since I was 12 years old. I thought Bay View was a good area to open this kind of restaurant.

2. Is your business a family business? If so, what members of your family work in the business and what do they do?

This is a family-operated business. My mother Effie helps me with the day-to-day operations. She is also responsible for all the Greek dishes on our menu.

3. How would you describe your menu?

A mixture of Greek and American dishes. Gyros, spanakopita, stuffed grape leaves, jumbo burgers, frozen custard. 

4. How many food items do you have on the menu? What are your specialties? Your customers’ favorites?

Roughly, 70 menu items. The gyros and burgers are definitely our customer favorites.

5. How many custard flavors do you have? Do you rotate flavors? If so, how often?

Good question! We make them up as we go sometimes. I would say we have about 15-20 flavors that we run regularly. About every other day.

6. How did you learn the restaurant business?

I started working in a restaurant of a family friend at the age of 12, bussing tables and washing dishes. As time went on, I learned more and became a cook.

7. Did you operate a restaurant elsewhere before opening your business on Oklahoma? If so, where?

The Gyros Stand is my first business (established March 20, 1989). I’d always worked for someone else prior to that.

8. What is the greatest challenge about owning a business?

Owning a business is a challenge in itself. There is a myriad of things involved in running a business not seen by the public.

9. Why did you choose to locate in Bay View and why did you choose Oklahoma rather than Kinnickinnic?

I thought Bay View would be a good area for my type of restaurant. When I saw [this] building, I liked it and knew that’s where I wanted to open my restaurant.

10. What is the best part of operating your business?

Without a doubt, all the people I’ve gotten to know. I’ve met many good people and made good friends in Bay View.
